How to substitute eggs in cakes?
The most commonly used egg alternatives for cakes will be silken tofu, yogurt, pureed fruit, vinegar (in specific recipes, strictly not for recipes that uses more than 1 egg).
Personally, I found a winning combination to substitute for eggs in cakes, which is a mix of yogurt and pureed silken tofu. It works out beautifully, especially in plain vanilla sponge cakes.

Baking soda, baking powder, vanilla extract, sugar, all-purpose flour are all basic ingredients you need to have for baking.

Yes it would work if a recipe calls for baking powder and you don't have it. However you would have to look at the whole recipe and see what other changes you would have to make.

My friends son is allergic to all you have listed apart from nuts. For his birthday I got some gluten and wheat free flour from the supermarket and there was a recipe on the back which worked perfectly. I would deffo recommend it. My friends son really enjoyed it AND was able to eat and share the same cake with everyone. Basically you replace the butter with veg oil and the eggs with a mashed up ripe banana. Really easy recipe...I had to make 2 to pile up with a jam filling but it was worth it! Good luck!

That's a lot of work and I would be approximating and so without being sure if it will turn out right I cannot give that information. Instead I would suggest you to use one of the many culinary converters which are available online. Allrecipes.com has one too.

I don't have time to check all your recipes right now, but have you tried the method of adding 10 ounces of a soft drink to a box mix. I did that last week and it was really great. I used a regular yellow cake mix and just mixed in 10 ounces of Dr Pepper. I cooked as directed, but made them as cupcakes. They were just as light an fluffy as with eggs. We iced with homemade vanilla frosting.

Rupal, I know to bake only in an oven. If you have a microwave oven, there are cookbooks available with recipes for baking in a microwave oven too. Maybe you can check those.
